Ingredients:

Gingerbread Base

Fudge Layer

Chocolate Topping

  • 120g milk chocolate, chopped, melted.

To Decorate

  • 2–3 tbsp Billington’s Gingerbread crumbs.

Method:

Prepare the base

1. Line a small square baking tin with greaseproof paper.

2. Place the Billington’s Gingerbread into a food bag and crush with a rolling pin until you have a fine, crumbly texture.

3. Melt the butter in the microwave or over a bain-marie, stir the butter and golden syrup over the gingerbread crumbs and mix well until fully combined and evenly coated.

4. Tip the mixture into the prepared tin and press down firmly using the back of a spoon to create an even base. Place in the fridge until set and firm to touch.

Add the fudge layer

5. Gently warm the fudge (either in short bursts in the microwave or over a bowl of warm water) until soft and spreadable.

6. Spoon over the chilled base and smooth into an even layer.

7. Return to the fridge to completely cool and firm up.

Top with chocolate

8. Melt the milk chocolate in a heatproof bowl over simmering water or in short microwave bursts, stirring until smooth.

9. Pour the chocolate over the fudge layer and spread gently to cover evenly.

Finish and set

10. Sprinkle over a light dusting of Billington’s Gingerbread crumbs while the chocolate is still sticky for decoration.

11. Chill for a final time until completely set. Then lift out of the tin and cut into neat squares.
