Ingredients:
- 250g Billington’s Gingerbread (unevenly crushed)
- 250g White Chocolate (we used a mixture of plain and mini egg flavoured)
- 30g Butter
- 2 tbsp Syrup
- 2 tsp Vanilla Essence
- 200g Mini Eggs (keep some aside for final decoration)
- 100g Mini Marshmallows

Method:
- Place a heatproof bowl over a pan of rapidly simmering water.
- Break the white chocolate into small pieces and add to the bowl – along with the butter, syrup and vanilla essence. Allow to melt, stirring occasionally. Remove from heat.

3. Place the Billington’s Gingerbread into a bag and crush into uneven chunks using a rolling pin.
4 Add the crushed gingerbread, mini marshmallows and mini eggs to the melted chocolate mixture. Gently stir to combine.

5. Lay out 12 cupcake cases and spoon the mixture into each case.
6. Decorate each nest with a couple of the remaining mini eggs.
7 Allow the nests to reach room temperature before placing them in the fridge for a few hours to set.
