• 300 g Billington’s gingerbread biscuits
  • 100 g Butter Melted
  • 300 ml Double cream
  • 165 g Cream cheese
  • 150 g Lemon curd
  • Selection of berries of your choice! But we used raspberries and blueberries to help create the traditional colours of the Union Jack flag

1. Crush the gingerbread biscuits until they are sandy and add the melted butter. Mix well.
2. Press into the flan case until the bottom and the sides are firmly packed down. Using the bottom of a glass is helpful.
3. If you have time, chill for 30 minutes.
4. Beat the double cream, cream cheese and lemon curd until it is very stiff and thick. Add to the tart base and smooth out.
5. Add your berries in your Union Jack pattern and chill for at least 4 hours. Keep it in the fridge until you are ready to eat it!
