- 140g Billington’s Gingerbread
- 200g white chocolate
- 100g thick white icing (for mummy bandages – you can use royal icing or thick writing icing)
- Pre-bought edible eyes (you’ll need 8–10 pairs depending on how many mummies you make)

Method:
- Cut your Billington’s Gingerbread into finger-sized pieces – aim for rectangles following Billington’s natural ridges.
- Break the chocolate into pieces and melt gently in a heatproof bowl over a pan of simmering water, or microwave in short bursts, stirring between each.
- Carefully dip or spoon the melted white chocolate over each gingerbread finger until fully coated. Place on a plate.
- While the chocolate is still soft, gently press two edible eyes onto each mummy.
- Pop the plate into the fridge for around 30 minutes until the chocolate is firm.
- To add the bandages. dip a fork into your thick white icing and flick it gently across each mummy to create bandage-like stripes. Be creative – messy is spooky!
- Return the mummies to the fridge for another 30 minutes to set the icing.
