Elevate your roast with this Soft-Set Honey & Gingerbread Glazed Beef Joint. Made with our signature gingerbread biscuits, this recipe brings a delicious twist to a classic, adding a lightly spiced, crunchy topping and a touch of sweetness that perfectly complements the rich beef. Simple to prepare yet full of flavour, it’s a standout centrepiece for any roast.
INGREDIENTS:
- 1.5kg beef roasting joint
- 4 tbsp soft-set honey
- 1 tbsp wholegrain mustard
- 1 tsp ground ginger
- 80g Billington’s Gingerbread fingers, crushed
- 30g fresh breadcrumbs
- 1 tbsp melted butter
- Salt and pepper
[Serves 6 – 8]
METHOD:Â
1. Preheat the oven to 200°C (180°C fan).
2. Season the beef well with salt and pepper, then roast according to your preferred level of doneness.
3. In a small bowl, mix together the honey, mustard and ground ginger.
4. In a separate bowl, combine the crushed Billington’s Gingerbread biscuits, breadcrumbs and melted butter.
5. During the final 20 minutes of cooking, brush the beef with the honey glaze.
6. Press the gingerbread crumb mixture over the joint and return to the oven until golden.
7. Remove from the oven and allow to rest for 15 minutes before carving.
8. Serve with your favourite roast accompaniments, such as crisp roast potatoes, seasonal vegetables, rich gravy, and Yorkshire puddings for a classic British roast.
